Description
Origin
Under the scientific name Paracentrotus lividus is one of the most coveted delicacies: the gonads of the sea urchin. The specimens of this echinoderm are sustainably caught in the coasts of Galicia, as well as the wakame seaweed that completes this canned food offered by Canthynnus.

Prepared by
The first step is to open the sea urchins and extract their precious gonads manually and very carefully so as not to damage them. After obtaining this fresh meat, they are washed and packaged, the pieces of wakame seaweed previously selected and cut are added and, finally, the can is covered with water and salt before being closed and sterilized.

Experience
This preserve is ideal as a topping for a seafood rice -for example, with shrimp and cuttlefish-, to flavor a soup or to put a spoonful on a gazpacho or a vegetable cream. It will also enhance the flavor of any ceviche or a sea carbonara, where we replace the classic guanciale with prawns.

Conservation
Its shelf life is 4 years from the date of manufacture, however, canning experts advise that, once the product is opened, it should be consumed within 24 hours. The ideal place for storage should be cool, dry and not exceeding 35ºC, without the need for industrial refrigeration.
