Description
Origin
The Siberian sturgeon featured in this preserve comes from the province of Teruel, an area with fish farms dedicated exclusively to the breeding of this fish. As a curiosity, from the adult female specimens of acipenser baerii -scientific name of this species- caviar is obtained, perhaps one of the most appreciated and valuable products of world gastronomy.

Prepared by
The fish arrives completely fresh at the factory, where it undergoes a process to obtain the canned product. Once there, the sturgeon is cooked and then cleaned and quartered to be manually placed in the can. Once the meat is placed in the can, it is completely covered with extra virgin olive oil.

Experience
This preserve would go great in a salad of finely chopped cucumber with some capers or, if you prefer, you can mix the meat with chives and cream cheese to make a spreadable spread and put it as an appetizer with some toast. It would also look great in a pasta dish with le sarde, changing the sardine for the sturgeon contained in this can.

Conservation
Its shelf life is 6 years from the date of manufacture, however, canning experts advise that, once the product is opened, it should be consumed within 24 hours. The ideal place for storage should be cool, dry and not exceeding 35ºC, without the need for industrial refrigeration.
