With a characteristic intense blue coloration, the mackerel is a specimen that, in this case, has been caught with purse seine nets in Galicia, where the specimens are usually larger in size. With a slender and elongated body, it is a highly valued species due to its gastronomic versatility. Proof of this is its roe, perhaps the best part of an already tasty fish.

The whole pieces of roe arrive directly at the factory. There they are cooked in such a way that the water does not boil in order to preserve the uniformity and texture of the food, since otherwise it runs the risk of breaking. Once cooked, they are carefully placed by hand in the can and covered with a layer of olive oil and a pinch of salt. The result is mackerel roe of the highest quality with a unique flavor, ready to eat.

Its shelf life is 5 years from the date of manufacture, however, canning experts advise that, once the product is opened, it should be consumed within 24 hours. The ideal place for storage should be cool, dry and not exceeding 35ºC, without the need for industrial refrigeration.
