Origin

The meat of razor clams, that bivalve mollusk that hides in a kind of vertical tunnel excavated in the sand, is highly appreciated in Spanish gastronomy. In this can offered by Canthynnus you will find specimens of Ensis arcuatus caught in the Galician estuaries, that paradise where seafood of the highest quality is harvested.

When the razor clams arrive at the cannery, the first thing that is done is to eviscerate them and then subject them to a cooking process. Once this step is finished, the pieces are selected according to their size and packed in the can. Before closing and sterilizing, a mixture of olive oil and natural broth made with water, salt, lemon, onion and bay leaf is added.

Experience

You can brown a couple of cloves of sliced garlic, then add pasta with a little of the cooking water and some parsley and, off the heat, the razor clams from this preserve. You can also serve them in an escalivada, in a finished rice dish or, if you are a classic, just with a squeeze of lemon.

Conservation

Its shelf life is 6 years from the date of manufacture, however, canning experts advise that, once the product is opened, it should be consumed within 24 hours. The ideal place for storage should be cool, dry and not exceeding 35ºC, without the need for industrial refrigeration.
