Description

Origin

The convoluted scientific name Aquipecten opercularis refers to what is known as volandeira, a bivalve mollusk that many generally call zamburiña, although in reality this is a different species of somewhat larger size. And this denomination is so widespread that it is common to find labels with it to facilitate the identification to the final consumer. The ones contained in this preserve come, of course, from one of the best places to catch them: the Galician Rías Baixas.

The specimens of this mollusk arrive fresh at the factory, where they are left in water for some time to loosen any sand they may have brought with them. After that, they are cleaned and gutted and undergo a cooking process. The last step in the preparation of this preserve is to pack the pieces and add a sauce which, curiously, does not contain scallops: it is made with sunflower oil, tomato, salt and spices.

Experience

The scallops are already cooked and accompanied by scallop sauce, typical of Galician cuisine. So, the only advice we give is to heat the contents a little if you want and enjoy every bite of the dish that is this canned food. Oh, and have some bread at hand, which is also important.

Conservation

Its shelf life is 5 years from the date of manufacture, however, canning experts advise that, once the product is opened, it should be consumed within 24 hours. The ideal place for storage should be cool, dry and not exceeding 35ºC, without the need for industrial refrigeration.
